In an exciting culinary collaboration, chefs Grégoire Berger and Pam Pichaya Soontornyanakij of Potong, Bangkok, will host an exclusive four-hands dinner at Ossiano, Atlantis, The Palm, on Tuesday, 21st May.
Inspired by a five-element philosophy—salt, acid, spice, texture, and the Maillard reaction—the duo has crafted a meticulously curated 10-wave menu for diners to indulge in. Set against the stunning backdrop of the Ambassador Lagoon at the one-Michelin-starred Ossiano, Grégoire’s hero dishes include langoustine tom yum uni and Thai-style sticky rice with mango and curry ice sorbet, while Pam will present her creations such as ‘Parts of Banana’ and ‘Potong’s Pad Thai’.
Chef Pam, a multi-award-winning and internationally renowned culinary figure, has received accolades such as the Michelin star and Asia’s Best Female Chef award, and has gained recognition for her innovative approach to Thai-Chinese cuisine. Potong, her latest venture, has received prestigious recognition since its opening in 2021, including a spot on Asia’s 50 Best Restaurants list.
Through Potong, Pam skillfully weaves her family’s stories into a thought-provoking tasting menu, spotlighting Thai-Chinese cuisine with creative spins on traditional recipes.
