As part of the Dubai Food Festival, Varq invites diners to experience its first exclusive Chef’s Table experience by Executive Chef Sonu Koithara of Varq and Michelin Star Chef Sriram Aylur of London-based Quilon
Michelin Star Chef Sriram Aylur is renowned for introducing exceptional Indian cuisine worldwide, with an experience spanning over 16 years. As an affiliated member of UK-based Quilon, the only Southern Indian restaurant to hold the prestigious Michelin rating, Chef Sriram’s culinary talent was previously recognized by the Taj Group in 1989.
Chef Sriram currently directs operations at the world-renowned Bombay Brasserie, with a clientele of national and international celebrities including Former PMs Atal Bihari Vajpayee, Dr. Manmohan Singh, Sir John Major, Prince Charles, Roger Federer, AR Rahman, Sunil Gavaskar, Tom Cruise, and Madonna. On the other hand, Executive Chef Sonu Koithara leads all culinary concepts at the Taj Exotica Resort and Spa, The Palm, Dubai, bringing his expertise in traditional Indian cuisine into the menus and recipes highlighted at Varq.
The specially curated menu features a range of contemporary-meets-traditional Indian delicacies including the succulent Murgh siya mirch (Chicken thigh with hung yogurt, cardamom, fenugreek, and black pepper), Bharwan gucchi (Lotus stem stuffing with mild saffron sauce), tender Sandalwood smoked lamb chops (Barbecued New Zealand lamb chops with onion red chili sauce and aam papad fennel jam), and signature Varqui Lobster (Rock lobster with tandoori shrimp, crisp filo sheet, and beaten gold).
For mains, expect the Jerusalem artichoke roast (Malabar spices), Clove smoked moong daal; and Thalasseri chicken or vegetable biryani, followed by delectable desserts for a delightful end to the unforgettable experience.
