Sponsored: The UAE’s first Lescure Best King Pie Competition, organised by Lescure and ICCA, took place on December 5 and 6, 2024, at ICCA Dubai

The event provided a platform to highlight the premium quality of Lescure, PDO Charentes-Poitou butter, a renowned product of the French group SAVENCIA, to the region’s culinary professionals. The competition was structured in two parts. On the first day, participants focused on preparing the pastry dough, which was then sheeted and rested overnight. The second day was dedicated to creating the filling and assembling the Galette des Rois. Eleven bakers from prestigious establishments across the UAE competed, demonstrating their skills with high-level technical and creative baking.

A panel of three expert judges evaluated the pastries: Alex Cristobal, Co-founder and Executive Chef at Flaky Pastry; Leonardo Luzalillo, Pastry Instructor at ICCA; and Chef Paul Hayward, former Executive Chef at Jumeirah Group and current consultant chef in the UAE. Their insights highlighted the elevated standard of the competition and the calibre of participants.

Amar Shah, Head Baker at SLS Hotel Dubai, emerged as the winner, earning an AED8,000 prize for his exceptional Galette des Rois. His pie featured a distinctive hazelnut skin, praline powder, and a delicate dusting of snow sugar, earning praise for its flavour and presentation.

Lescure, PDO Charentes-Poitou butter, is known for its exceptional quality and unique flavour, thanks to the fertile Charentes-Poitou region of France. The area’s climate produces high-quality forage, resulting in butter with a hazelnut-like taste and dry texture highly regarded by pastry professionals.

This inaugural competition not only showcased the talent of the UAE’s top bakers but also underscored the importance of premium ingredients in crafting exceptional pastries. Following its successful debut, the Lescure Best King Pie Competition is poised to become a key event in the region’s culinary scene, offering an ongoing platform to celebrate craftsmanship and innovation.
