The inaugural edition of Gulfood Top Table at Gulfood 2022 kicks off on a remarkable note, with leading chefs turning up the heat on food sustainability
Gulfood 2022, the 27th edition of the world’s largest annual Food & Beverage trade exhibition is ongoing at Dubai World Trade Centre DWTC until February 17.
The past two days February 13 and 14, since the F&B sourcing event began, saw the debut of Gulfood Top Table – a spanking new feature boasting a star studded line-up of award-winning chefs, disruptors and global trendsetters in the industry. With more to come over the next three days February 15 to 17, here is a short description of the highly-engaging events that took place yesterday and today, with top culinary talents turning up the heat on food sustainability.
Kicking off day one’s Top Table was Nick Alvis, Founder and executive chef of Folly, who took his audience through a Folly signature, Roasted saddle lamb with whipped pine nuts and pine nut salsa. “If we are not sustainable, we have no food life to use. It’s great to hear that the UAE has more fish farming and produce coming directly from local farms. It’s fantastic to see the massive rise in sustainability within the last two years, and we as chefs are trying to use as many locally sourced ingredients as we possibly can,” said Chef Alvis.
Luigi Vespero, the renowned Italian chef and F&B Director of Waldorf Astoria DIFC, held his Tortellini in Brodo Masterclass. “The dish I’ve created is a representation of sustainability and reducing food waste as every ingredient you buy is used in the dish with nothing going to waste. Gulfood brings together food lovers from around the world under one roof, showcasing the final product, producers and the whole food supply chain. Top Table is the cherry on top of all the activations and is a great opportunity to bring the public together.”
Day two witnessed a Masterclass by Antonio Bachour, the World’s Best Pastry Chef 2018; and a Workshop on Pickling, Preserving & Fermenting by The Arbor School Dubai, among many other events.
Over the course of the five days of Gulfood 2022, Gulfood Top Table is set to feature up to 70 chefs from 50 restaurants preparing over 1,000 unique dishes.
