Folly and Publique, located in Souk Madinat Jumeirah, are set to elevate their dining experiences and operations with the employment of three new members

The sophisticated Folly and the vibrant Publique restaurants, sited in Souk Madinat Jumeirah, have revealed the selection of three new joiners to their existing teams. All three of them boast a wealth of experience, moving directly from a six-month stint at Expo 2020 Dubai where they represented two successful restaurants also managed by Gates Hospitality. These were, Adrift Burger Bar and Scarpetta Mercato.

Joining Folly as General Manager, Mario Scanniello previously headed up Scarpetta Mercato, an Italian fine dining concept imported from New York. Preceding this, the Italian national led the Italian restaurant Il Faro, part of Nakheel Hospitality; and also held positions at a range of luxury hotel brands including The Westin, Jumeirah and Grand Melia.

Zukey Choudhry, a British national, joins Publique as General Manager after being at the helm of the Adrift Burger Bar team. Prior to this, he was in charge of operations for the likes of Pickl and Cheesecake Factory, here in Dubai.

Grant Marais joins as Head Chef at Publique; and the South African national brings his culinary experience from Adrift Burger Bar and five-star luxury hotels such as the Mandarin Oriental and Marriott Marquis in Doha, Qatar.
