Above Eleven Dubai welcomes Chef Erick Alonso Ramos Cornejo as its new Chef de Cuisine

With over twelve years of extensive culinary experience, Chef Erick is set to elevate the dining experience at this renowned Peruvian-Japanese restaurant. Together with General Manager Alex Park, they form a dynamic leadership team dedicated to advancing the restaurant’s culinary vision.

Originally from Peru, Chef Erick has navigated an impressive culinary journey, working in both Latin America and the Middle East. He started his career in Lima, where he developed his craft at the well-known Sushi-ito and the fine-dining establishment Lima 27. His expertise grew further in Quito, Ecuador, as Sous Chef at La Locanda Restaurant, where he helped launch a popular Mediterranean concept. Chef Erick then moved to Mexico, taking on the role of Chef de Cuisine at Latin Bistro – Sea Breeze, and spent two years mastering Peruvian cuisine at Ni in Nizuc Resort, Cancun. Most recently, he made significant contributions as Sous Chef during the opening of W Muscat in Oman and excelled as Senior Sous Chef at Emirates Flight Catering, creating menus for first-class passengers.

Commenting on his appointment at Above Eleven, Chef Erick said, “I’m thrilled to join Above Eleven as the new Chef de Cuisine. My goal is to bring a fresh perspective to our Nikkei menu while remaining true to our mother brand in Bangkok, blending my passion for Peruvian cuisine with the diverse global influences I’ve gathered over the years. I look forward to collaborating with the talented team here and creating exceptional dining experiences that will delight our guests and continue to make Above Eleven a must-visit destination.”
