With over 15 years of international culinary experience, Chef John brings a unique blend of his Peruvian heritage and expertise in Spanish and Latin cuisines to the restaurant’s kitchen

Having worked across South America, Europe, North Africa, and the Middle East, Chef John is known for his ability to combine traditional flavours with innovative techniques. His passion for creating memorable dining experiences is evident in Lúnico’s menu, which fuses vibrant Spanish and Latin ingredients with modern presentation and cooking methods.

Commenting on his new role, Chef John said, “I am excited and honoured to be part of this project, it’s an incredible opportunity to contribute, learn and grow alongside an amazing team. Using my knowledge of Spanish and Basque cuisines with my personal heritage and background, I have created a menu blending nostalgic flavours with modern techniques. Spanish cuisine has generations of culinary evolution and I love how it celebrates fresh and bold ingredients like chilis, tubers, spices, citrus, and endemic products, which guests will find on our menu here at Lúnico. For me, cooking is about creating memories for our guests and sharing a story behind every dish.”

Lúnico’s menu will feature a range of dishes that reflect Chef John’s vision, including standout items like Purple Potato Mille-Feuille with foie gras and Guacamole Bombón, a moon-shaped avocado filled with Spanish guacamole. Other highlights include Pulpo Basco, Ceviche Gallego, and Grandma’s Crema Catalana for dessert.

With ingredients sourced from Spain, Peru, and beyond, Lúnico offers an authentic dining experience. Fresh tuna, octopus, and organic extra virgin olive oil from Toledo will be complemented by Peruvian purple corn, chiles, and other global ingredients.

Lúnico is located at J1 Beach South, Jumeirah.
